What is Everyone Eating?
Is anyone else always wondering what other people are eating? Most of us are trying to feed ourselves, and maybe other friends or family members, three times a day - at least. It is a lot of work!
So what is everyone eating?
I love watching “What I Eat in A Week” videos on YouTube, so I thought why not translate that to written form?
The past week has been a little different because of my 24th birthday and a nasty cold I caught that has had me under the weather a few days. But when does a week ever go exactly as you plan it?
Making room for flexibility in your meal planning is the number one tip I have for making it less stressful and more effective.
Let’s talk about what I have eaten this week!
Sunday
Breakfast: Sunday morning breakfast just depends on how much time we have. On mornings we have more time, it is usually eggs, chicken sausage, and avocado on sourdough. If we are running out the door to church, it might be a bagel or a protein bar.
Lunch: Sunday is usually our grocery day and around lunchtime I am usually shopping. Typically, this is the meal where we try to use up anything leftover from the week to pull together something to eat. If that doesn’t work, we will pick from some of the frozen items I keep stocked in the fridge.
Dinner: Sunday night dinner I like to make something that will have plenty for leftovers on Monday for lunch. This week that was pasta - specifically tortellini with sauce, cheese, bread, and a side salad. Pasta is my favorite, and lucky for me, it is so easy too!
Monday
Breakfast: Monday was my birthday this past week so Jackson went and picked me up a croissant and a matcha for my breakfast.
Lunch: For lunch, we had leftover pasta from the night before. I love when leftovers make meals easy!
Dinner: Because it was my birthday, we did takeout for dinner from a local place down the street. Usually, we try to only eat out once or twice a week, but you will see this week had some exceptions!
Tuesday
Breakfast: This morning, I had my usual breakfast which is an avocado on sourdough with eggs. Jackson’s usual is typically greek yogurt topped with berries, granola, and honey - a great way to get protein in the morning without eggs.
Lunch: I prepped chicken salad for lunch on the days when we did not have any leftovers. We have done bbq, buffalo, the flavor options are endless!
Dinner: We got takeout from Panera this night which was not planned. However, I got sick this week, and this was the night I really started not feeling well! Soup from Panera for dinner!
Wednesday
Breakfast: Because I was sick, I opted for warm oatmeal for breakfast. Typically, I buy the packs that are quick to make, but I also love to make it fresh when I have time. If I am buying a more “processed” version, I look for gluten free oats and lower sugar.
Lunch: We had enough chicken salad to cover lunch today too!
Dinner: Wednesday’s dinner was taco bowls - a meal we have a couple times a month. We love any meal we can turn into a bowl - taco and burger bowls are staples.
Thursday
Breakfast: Another oatmeal morning because - you guessed it - still sick!
Lunch: With dinners, I try to make sure we have enough for lunches the next day. As a teacher, I don’t have a lot of time on my lunch break so having something quick and easy to heat up is so helpful! For today, that was leftover taco bowls topped with some fresh avocado.
Dinner: We use our air fryer almost every meal for something, and if you haven’t gotten one yet, I highly recommend it! We used it this day for homemade slider burgers and air fried Japanese sweet potatoes. This was my first time trying the Japanese sweet potatoes, and I love the way they taste!
Friday
Breakfast: Today, I was back to my eggs and avocado toast for breakfast.
Lunch: Lunch was leftovers from Thursday night, and I still had some leftovers from Wednesday night too that I did not finish the day before. Meal planning with room for leftovers helps no food to go to waste!
Dinner: Friday night we always do breakfast for dinner. That usually either looks like waffles or smoothie bowls. After being sick, I was craving a huge smoothie bowl filled with tons of hidden vitamins and nutrients. Typically we do almond milk, coconut water, frozen banana, frozen blueberries, frozen strawberries, acai, flax seeds, protein, collagen, almond or peanut butter, granola, cocoa nibs, and honey on top. It is delicious!!!
Saturday
Breakfast: Our Saturday morning traditions is croissants. We usually have the frozen ones from Trader Joe’s at home, but if not, we go out and pick some up. Jackson likes his with coffee. It is something I look forward to all week!
Lunch: Similar to Sunday, Saturday is a day to clear out the fridge and eat up any remaining leftovers from the end of the week. This week, it looked more like a snack plate as we had lots of leftover fruit to pair with other items.
Dinner: We had dinner with friends to celebrate some fun news on Saturday night, so dinner was takeout from Dos Bros - our favorite local tex-mex.
And that was our week of eating!
